Secret To Fluffy Milk Bread is Tangzhong
First, why are homemade Asian bread so fluffy and soft? Asian bread is always soft yet slightly chewy because of Tangzhong, a roux made with flour and water. This keeps the bread extra moist and soft, giving it an extra fluffiness. Adding in Tangzhong guarantees that your Milk Bread will come out perfect every time.
Make sure your Tangzhong is completely cooled down before adding it to the rest of the ingredients. I recommend making it the night before to help you save time.

Milk Bread Ingredients
Tangzhong
- 2 tbsp of All Purpose Flour
- ½ cup of Water
Milk Bread Dough
- 2 ½ cups of All Purpose Flour
- 3 tbsp Sugar
- ½ tsp of salt
- 1 tsp of Yeast
- 1 Egg (beaten)
- 60 ml of Milk
- 50 ml of Water
- 2 tbsp of Butter, room temperature
Egg Wash
- 1 Egg Yolk
- 2 tbsp of Milk

- 3 tablespoons of coco powder
